Things I made for Shaun’s birthday. Vegan Chocolate Cake. The light frosting is from Vegan Cupcakes Take Over the World, and is excellent.
I didn’t use a recipe for the curry or dhal (just threw them all together, really, though I used a jar of tamarind & garlic curry sauce for the spices in the curry) and I got the whole wheat naan from Whole Foods.

Cooked a fabulous curry in spite of unfamiliar cookware and kitchen. Butternut squash, eggplant, asparagus, portobello mushroom and garlic.
I used some recipes to guide me through cook times but it ended up taking ages longer than indicated. I just googled “vegan butternut squash curry” and looked at several of the top results for ideas.

Breakfast on Sunday. “Fronch” toast, from Vegan with a Vengeance, & fruit. I didn’t have baguettes so I had to use regular old sliced bread but it was super delicious, and so easy!

The broccoli & asparagus were cooked in olive oil, red wine & soy sauce, the potatoes very simply in olive oil & sea salt in a cast iron skillet and the mushrooms & garlic in olive oil & balsamic vinegar.

Balsamic-Glazed Portobello Mushrooms (Vegan with a Vengeance), vegetables (zucchini, asparagus, red potatoes), basmati rice.
This was SO amazing. The mushrooms were delectable.
